We all know the old saying... When life gives you a giant 5 pound bag of shredded cabbage, make coleslaw!
This is a curried coleslaw recipe I found to use up some of the cabbage. Great for potlucks, or whenever you may end up with a few too many pounds of cabbage. It happens to the best of us.

Carrots: 2 cups shredded
Onion: 1 large yellow, sliced thinly in arcs
Garlic: 1 clove
Curry powder: 2 tbsp
Coconut milk: 1 14oz can
Butter: 2 tbsp
