Crostini

I love baguettes, but I often am only able to eat about a quarter of it that day. By the next day the rest of the baguette is stale and I am sad. Crostinis make a great snack and a perfect conveyer for just about anything else you can think to put on them. Never let a baguette go to waste again!

Sweet baguette toasted with olive oil, garlic, salt, pepper, and parmesan cheese.

  • Heat oven to 350 F degrees
  • Slice baguette (I used ACME sweet rustic baguette)
  • Crush garlic (if desired) into olive oil and brush on both sides of toasts
  • Place toasts on foiled baking pan
  • Grate parmesan cheese and gently place on toasts (or skip for vegan crostinis)
  • Lightly sprinkle with coarse salt and pepper
  • Bake for ~18 minutes

Green Smoothie II

I made this smoothie as afternoon snack before work, following a breakfast of bagel and cream cheese with onion, green peppercorns, and salmon smoked by my roommate Chris' father. AMAZING!! But I digress...the smoothie was.

1 handful Frozen Blueberries
1 Banana
4 leaves Rainbow Chard
1 handful Chopped Zuchinni
2 Black Mission Figs
1 TBSP Walnut Butter
6 oz Carrot Juice

Tip! If you don't want to remove the stems from the Chard, Kale or the like, make sure to blend the shit out of it!

Green Smoothie 1

This is Green Smoothie #1, as I'm sure there will be more to come. Perfect for a refreshing late summer afternoon.

  • 4 Kale leaves
  • 1 Banana
  • 1 large handful cut mango
  • 1 large handful cut honeydew melon

TIP! I like to blend the kale alone with a cup of water before adding the fruit, just to make sure it is well blended.

TIP! For breakfast, blend the night before if you wake up early to go to work, so you dont wake up anyone who may still be asleep. The smoothie will be fine in the refrigerator for at least a day and makes a delicious morning treat!

Green smoothies are a great way to make sure you are eating enough greens. Here is an article on the importance of greens. Yum!
