The People's Granola

2 Cups Rolled Oats
1/2 cup Almonds, chopped
1/2 cup Dried Cranberries
1/2 cup Shredded Coconut
1/3 cup Flax Seeds
2.5 tbsp Corn Oil
1/3-1/2 cup Honey (to taste)
1-2 tsp Vanilla Extract
1-2 tsp Ground Cinnamon

Preheat oven to 275.

In a large mixing bowl, combine the first 5 ingredients. In a smaller mixing bowl, combine the last 4 ingredients until homogenous. It should look something like this:

Mix the wet ingredients into the dry, until well mixed. That might look something like this:

Turn this mixture out onto a parchment paper-lined baking sheet. Bake for 10 minutes. Remove from the oven, mix and spread out again on baking sheet. Bake for another 10-15 minutes or until golden.

Transfer the Granola, still on the parchment paper, to a new baking sheet for rapid cooling. This way you can eat it faster!

Red Coat Pancakes

These pancakes were inspired/consumed by my new friend from across the pond, Alexander Peerman. I, for one, welcome our new imperialist overlords!

1 cup Flour
1 tsp Salt
1 tsp Baking Powder
1/2 tsp Pepper
1/2 cup Milk (plus a little more for later)
2 Eggs
2/3 cup sautéed Spinach, chopped
1/2 cup Carrots, shredded
5 Salami Slices, chopped
3 Tbsp Goat Cheese
2 Tbsp Parmesan, grated

In a large mixing bowl, combine the first 4 ingredients. In a separate bowl, whisk together eggs and milk. To wet mixture, add spinach, carrots, salami and goat cheese until well combined. Add the wet mixture to the dry and stir until mixed. Add milk if necessary until a pancake-like consistency is reached. Add parmesan. Fry 'em in butter. A Couple minutes on one side, another minute on the other.

Take some more goat cheese, whip it with salt, pepper, and other herbs. Dollop!
